Easy Mac and Cheese

I recently used this recipe for mac and cheese. My older one, who used to love cheese, but has since decided he’s too good to eat it, didn’t event try it. But my younger one devoured both his share and his brother’s. Kid-Friendly Easy Homemade Mac and Cheese Recipe I bought a butternut squash pasta from Trader Joe’s a while ago and it paired beautifully with this cheese sauce. Getting back to the cheese sauce, I used about 60% cheddar, 25% mozzarella (and my that… Read More

Eggless Chocolate Chip Mini Cupcakes

My 3.5 year old found a pack of mini-cupcake wrappers in the cabinet and wanted to make cupcakes. I made a deal with him: we can make it and put it in the oven. But then we have to eat breakfast, and we can eat the cupcakes after. Surprisingly, he did it! A quick Google search led me to this recipe, which was a hit. My son had a lot of fun making it, and he ate it too (which is saying something). I did tweak the recipe, so I wanted to share that with you. First, the recipe calls for all purpose flour. Instead of 1 cup of all… Read More

On my little healthy kick, I decided no eggs and no all-purpose flour (and no chocolate chips — can you believe it?!). Healthy Eggless Whole Wheat Pancakes (Fluffy!) Ingredients: 1.5 cup whole wheat flour 1 tsp sugar 1 tsp cinnamon (optional – I was out so I skipped this) 1.5 tsp baking powder 1 cup milk (I used 1/2 percent, but the original recipe called for whole milk) 1 tbsp vegetable oil 1 tbsp water 1 tsp vanilla extract 1.5 tbsp butter melted (came out ok with… Read More

Vegetable Broth

If you plan to make a lot of soup, this is one of the key recipes you should have. It’s also so easy that I’m surprised more people don’t just make their own vegetable broth/vegetable stock. Especially, with a crockpot or Instant Pot, you don’t even need to be around waiting it! Just the same, this recipe is tailored to making it on the stove. Use a very large pot, preferably a stockpot. Put in just about any vegetables at all. You don’t need to chop them unless they won’t fit in the pot. In most cases, you don’t even have to peel them, because the skins are loaded with… Read More
